This cherry vinegar is made from 'Sir-Don' cherries produced on Jauma's organic and biodynamic cherry orchid. The cherries are stomped on, allowed to naturally ferment, then pressed to barrel where it spent 2 years concentrating. The end result is rich, tart, jammy, and reminiscent of balsamic.
